Winter Melon Soup with Chicken and Cilantro

     Soothing Light Savory Winter Melon Soup!
     Winter Melon is a great diet food for those who are calorie conscious.  Today's soup has a light satisfying flavor that makes one crave for more.  Winter melon is very tender when cooked in a soup and the texture is nice on the palate.  Cilantro really adds a nice aromatic flavor.
     Winter Melon Soup with Chicken and Cilantro Recipe: 
     This recipe yields 1 large serving of soup.  (About 2 1/2 cups.)
     Basically, if a person can boil water, then making winter melon soup will be easy!  
     Winter Melons are huge, so they are usually cut into pieces that weigh a couple of pounds at Asian food markets.
     Step 1:  Select an 8 to 10 ounce piece of winter melon.  (Enough for 2 cups is plenty.)
     Remove the rind, seeds and soft pulp.
     Cut the winter melon into 3/4" cube shaped bite size pieces and set them aside.
     Step 2:  Boil 3 cups of light chicken broth in a sauce pot over medium high heat.
     Add 1 teaspoon of thin sliced shallot.
     Add 1/2 teaspoon of minced ginger.
     Add sea salt and white pepper.
     Add 2 ounces of thin sliced boneless chicken breast.
     Add the cube shaped pieces of winter melon. 
     Step 3:  Return the soup to a gentle boil over medium high heat.
     Reduce the temperature to medium low heat.
     Simmer the soup, till the opaque pieces of winter melon become tender and they turn a translucent color.  (Do not stir the soup or the tender winter melon pieces will break apart!)
     Step 4:  Add about 10 cilantro leaves.
     Pour the soup into a large soup bowl.
     This is a simple soup that satisfies the senses!
